The enjoyment of a slow cooked meal is the best ‘medicine’ during these cold winter months.Let’s perfect the ultimate in comfort food: the cassoulet (France’s inaugural casserole!) You’ll learn many techniques for wintertime cooking that can translate to many dishes to last through the season. From the broth, to braising meats, to the basics of bean cookery, you’ll leave armed to make the perfect cassoulet.  Don’t even know why you need to know about cassoulet?  Think cooking fundamentals:  you can apply everything you learn in class to other dishes. Class culminates daily in a family-style meal around our beautiful barnwood tables.

On the menu… winter greens with pancetta vinaigrette ~ cassoulet with duck comfit & Middleground Farms pork ~ apple tarte tatin with caramel and vanilla bean crème anglaise.

Enjoy a glass of wine or beer upon arrival and another with dinner! All non-alcoholic beverages are also included!

Due to the nature of our classes, all payments are non-refundable or exchangeable. If you find yourself unable to attend, you may transfer the ticket to someone else. However, we are unable to refund, exchange, or apply a credit to another class. All payments are final.
