The smell of a slow cooked meal is the best ‘medicine’ when it’s cold & rainy outside. Let’s perfect the ultimate in comfort food: the cassoulet (France’s inaugural casserole!) We’ll explore locally made sausages and the process of making duck confit. You’ll learn many techniques for wintertime cooking that can translate to many dishes to last through the season. From the broth, to braising meats, to the basics of bean cookery, you’ll leave armed to make the perfect cassoulet. Don’t even know why you need to know about cassoulet? Think cooking fundamentals: you can apply everything you learn in class . Class culminates in a delicious meal served family style around our beautiful barn wood tables.
