In this class we explore the myriad of colors, textures and flavors outside the pumpkin paradigm with Simple Squashes. Chef Jason French will lead you past the pumpkin patch and offer up tips, tricks and solid methods to bring out the flavorful, warming and satisfying winter squash. Techniques covered range from roasting and frying, puréeing hot liquids, sweating vs. sautéing, basic bread bakery and pastry dough. As always, this hands on cooking class culminates in a family style meal around our beautiful barnwood tables.
