Don't be scared by salad. This is NOT a class about diets. The bounty of autumn brings fall greens, heirloom potatoes, beans, and squash. Let's figure out how to put vegetables and grains (and sometimes meat!) together to make a well balanced and flavorful meal. We'll even call it a salad! We'll prepare a variety of green, potato, bean and grain salads with both classic and innovative flavor combinations. Our chefs will show you how to build on a basic vinaigrette that can balance and enhance a "salad" and offer tips on how to expertly compose an impromptu salad using meats, greens and grains. Learn how to enhance flavors with saltiness (like anchovies or cheese) or a variety of acids (try lemon juice or pickled components), and sweet (think fresh or dried fruit) then sit and enjoy the fruits of your labor with a crisp lovely wine! Class culminates in a family style meal served around our beautiful barnwood tables. Bring a friend or a date and join us for Flavors of Portugal! As we move into fall it is fun to explore the rustic and hearty dishes that exemplify Portuguese cuisine. Lesser known that it's neighboring Spain, the cuisine is heavily influenced by the sea. Chef Jason French will teach you how to work with salt cod and the technique to perfectly crisp croquettes, how to work with seasonal green from the garden to make a delightful soup, and how to make a yeast-leavened bread traditional to Portugal. Throughout the evening, Brian Branco, a Portuguese wine specialist whose winemaking family is from Northern Portugal, will taste & teach you about the wines of the region. As always, the class culminates in a family-style meal around our barnwood tables. On the menu....pastis de bacalhau (salt cod croquettes) ~ caldo verde (soup of greens) ~ porco alentejana (clams & sausage) ~ papo secos (portugese bread) ~ pasteis de nata (custard) A tasting of Portugese wine will be included. Additional wine will be available by the glass or bottle. Registration is for two people.
Eat more vegetables! A diet rich in foods from the earth doesn’t have to lack flavor & depth. If you are trying to incorporate more vegetables in your diet, or feel like you’re in need of veggie inspiration, this class is for you! We’re making an elegant vegetarian meal, not by bending our recipes to our will, but rather looking around our garden and celebrating what we already have on hand. We will talk about ways to easily make this meal work for vegan diets as well. The recipes you'll learn will be technique driven, meaning you'll be able to apply what you learn to make many variations to last throughout the season. Each item could be a vegetarian meal in itself, or be a fantastic accompaniment to your favorite meat. Come enjoy fall from the garden at The Kitchen!
