Most people find game meat a bit intimidating, but would love to include these lean, healthy proteins into their diets. Prepare to learn and enjoy some delicious game meat dishes that you will be able to recreate with ease! We will be working with venison, duck, and rabbit. We will start with whole duck, and learn how to turn it into two different preparations: searing duck breast to go atop a lovely spring time salad with bountiful flavor, and preserving the legs into duck confit. We will learn about different types of venison loin, how they are best stuffed and slow roasted. We will also show you some great uses for rabbit, and how to make a classic braise. Korean BBQ Cooking Class

Korean BBQ is all about technique and grilling, so what is better than learning how to make it with us? We will be making some KBBQ Classics! Together we will put together some heavenly Bibimbap, a traditional Korean rice dish. You will learn how to work with a thin cut of beef short rib, and how it can be beautifully paired with a traditional sweet marinade.  You’ll learn how to work with pork belly, and how to make it tender and delicious.
