Shaved Summer Squash with Whipped Feta

You will want to eat your squash when prepared with whipped feta!

Number of Servings: 4

INGREDIENTS

1 small shallot, thinly sliced
2 Tablespoons champagne vinegar
2 medium zucchinis
2 Tablespoons extra virgin olive oil
Juice of one lemon (reserve zest for below)
sea salt and ground black pepper, to taste

Whipped Feta
½ cup mixed herbs, stems removed
zest of one lemon
8 oz feta cheese, crumbled
1/3 cup heavy cream
Pinch cayenne pepper

INSTRUCTIONS

For the Squash:
Place the shallots in a small bowl and cover them with the champagne vinegar. Let them sit for 10-15 minutes while you prepare the rest of the salad.

Using a vegetable peeler, shave your zucchini lengthwise. Arrange the shaved zucchini on your serving plate on top of Whipped Feta. I like to curl the pieces a bit for presentation. Spoon the
vinegar-soaked shallots evenly over the shaved zucchini. Squeeze lemon juice over the top. Sprinkle the chopped herbs over the top of the shaved zucchini salad. Evenly drizzle the extra virgin olive oil over the top as well.

For the Whipped Feta:
Finely chop the herbs. Combine the herbs, lemon zest, feta and cream in the bowl of a food processor and blend until completely smooth and creamy, 4-5 minutes, scraping down the sides of the bowl as needed. Spread the whipped feta onto a large platter or individual plates
