Winemaker

After graduating, John undertook a four-year winemaking apprenticeship at Fiddlehead Cellars under the mentorship of acclaimed winemaker Kathy Joseph. There, he developed a strong technical foundation and a deep respect for the craftsmanship of winemaking.

At Provignage, John brought a disciplined approach and a genuine passion for the art of wine, helping uphold and advance the winery’s high standards across all facets of production and collaboration. Guided by a love for the natural world, culinary exploration, and a rich palette of enological experiences, he played a central role in the evolution of Provignage’s winemaking philosophy.

Following a transformative 18-month sabbatical—spent exploring tea farms in Sri Lanka, trekking through remote regions of South America, and working harvest in Chile’s historic Itata Valley—John returned to the Pacific Northwest with fresh perspective and renewed inspiration. He now serves as winemaker at Evening Land Vineyards in Oregon, where he focuses his craft on Chardonnay and Pinot Noir. John’s insatiable curiosity finds a perfect outlet in the complex soils of the Seven Springs Estate, where he continues to deepen his understanding of site expression, farming nuance, and the quiet details that shape world-class wines.

At Evening Land Vineyards, we believe that land stewardship, vineyard sensitivity, and conscientious farming are key to producing high-quality, age-worthy wines that depict a true sense of place.

Land Stewardship
Healthy vineyards create thriving ecosystems. In short, when vines are thoughtfully integrated with their surroundings, the organisms that live among them – plants, animals, and human beings – flourish too. Ultimately, we wish to explore the character of our vineyard with holistic integrity.

Vineyard Sensitivity
After countless years of farming the same site, we’ve found that being in tune with its unique idiosyncrasies is the best way to create terroir-specific wines. In addition to farming organically and implementing biodynamic principles, having discernment for the vineyard’s many nuances is key.

Conscientious Farming
At Evening Land, we examine the vineyard through the lens of winemaking. From pruning through harvest, nothing substitutes quality. Crafting delicious, complex and cellar-worthy wines is paramount, and organic farming with biodynamic principles – among other efforts – gives our winemaking team the best chance to achieve this goal.

Overall, our philosophy is simple. We are farmers, and are therefore very hands on in the vineyard, which allows us to remain relatively hands off in the cellar.

Available Options

Three options are available:
Family-style seating at the Chef’s Table, limited to 20 people
Four bistro tables, accommodating two guests each
Wine barn, for up to 10 guests

Per Person Pricing

A per-person cost of $165, which includes dinner, pairings, and gratuity.

For Large Groups

If you have a party larger than 10, call The Kitchen at 503-746-3030 to allow us to assist you with your reservation.

Single Seat at the Chef’s Table

This is a single seat ticket at our Chef’s Table and includes dinner, pairings, and service for one guest.

Price: $195

Table for Two

This is a ticket for two (2) guests at a bistro table, and includes dinner, pairings and service for each guest.

Price: $390

GROUP: Wine Barn Reservation

Reserve the Wine Barn for this event, and we will contact you to coordinate details. The Wine Barn accommodates 4-10 guests.

NOTE: The final invoice will be issued the night of the event based on the number of guests minus the deposit.
