Pressure Cooker Cooking Class

The pressure cooker is no longer a thing of the past! With modern equipment (heck, you’ve probably already bought one) and a bit of confidence, you’ll wonder why you haven’t been using it for years. Beets done in 15 minutes? Braised greens in less than 20? Carnitas in an hour? Your idea of weeknight suppers will be changed for good. We’ll end the class with a beautiful dinner around the kitchen table with wine.

Cooking in Florence Guest Chef Series – Secrets of Italian Baking

For this weekend only, The Kitchen is excited to be hosting two guest chefs from Florence, Italy: Chef Laura Franceschetti and Chef Gianluca Somigli of “Cooking in Florence.” When cooking, serving, or instructing, Laura and Gianluca prefer to engage with participants, share stories, and tell jokes. Laura (Gianluca says) is the preeminent lady of the house, the padrona di casa, while Gianluca (Laura says) is the creative force, a “gypsy chef” with global experience. Respectively from Florence and Fiesole, they were both raised in Tuscan families where top-shelf, seasonal ingredients were prioritized over everything else in the kitchen. When that sort of attitude is in your blood, Laura says “Everything we do revolves around our love for the table.”  Don’t they sound like the perfect fit for The Kitchen?

In this traditional Italian baking class, you’ll learn the secrets to the Italian love for all things dolce. Whether enjoying a pastry with their morning espresso, or indulging in a decadent late-night snack, Italians have the best recipes for sweet treats! Your tastebuds will be tantalized, while you discover the most delightful way to enjoy a meal and end it on a sweet note!

A glass of lovely Italian wine will shared at the beginning of class, and again with dinner.

As always, the class culminates in a family style meal served at our beautiful barnwood tables.

A delicious lunch of Tuscan spelt and bean soup and salad with chicken will be enjoyed.

In our final class of the series, you have the opportunity to learn from Laura and Gianluca all the best techniques for playing with pasta! With a little time and a lot of love, you will have the confidence to add fresh pasta to your meal repertoire any night of the week. From mixing and rolling out your doughs, to exploring the differences between traditional pasta textures and shapes, to perfecting a seasonal sauce, the chefs will have you ready to bring the excitement of home-made pasta to your own kitchen!

Plant Based Meals: Winter Garden

A diet rich in foods from the earth doesn’t have to lack flavor & depth.  If you are trying to incorporate more vegetables in your diet, or feel like you’re in need of veggie inspiration, this class is for you!  The recipes you’ll learn will be technique driven, meaning you’ll be able to apply what you learn to make many variations to last throughout the season. Each item could be a vegetarian meal in itself, or be a fantastic accompaniment to your favorite entree. Come enjoy winter from the garden at The Kitchen!

Back to Basics: Sauces

Purees, emulsions, and suspensions, OH MY! In this class we will create simple, delicious, and elegant sauces for your perfectly cooked food. We will teach you how to balance a vinaigrette based on the different ingredients in different salads. You will learn how to create a quick pan sauce for many different types of proteins. You will learn how to make fantastic compound butters, homemade mayonnaise & aiolis. We’ll teach you about sugar cooking while making caramel sauce and show you how to heat fats while keeping an emulsion stable when making chocolate ganache.

On the menu … roasted chicken with white wine pan sauce and root vegetable puree ~ roasted potatoes with saffron aioli ~ winter green salad with blood orange vinaigrette ~ warm baguette with compound butter ~ salted chocolate ganache tart with caramel sauce

Date Night Out: Celebrate Valentine’s Day Class

We all have heard that certain foods can be aphrodisiacs. Since it is the day of love, let’s explore more of these dishes and myths. We will get creative and use some common “love” ingredients such as figs, oysters, chocolate, lamb, vanilla, and red wine.  Come in pairs and enjoy an evening of great food, great wine, and great laughs!

If breakfast for dinner is your favorite meal, join us in The Kitchen for a fun filled evening of cooking and laughter! We’ll share tips for making some kid- and parent-approved breakfast-for-dinner dishes that the entire family will enjoy making! Learn to make perfectly fluffy pancakes and syrup with a twist. Plus we’ll miniaturize a frittata (because smaller food is cuter) and modernize hash browns for 2020! You’ll expand your cooking repertoire together, celebrating the tradition of sharing time in the kitchen!
