Due to the nature of our events, classes, and dinners, all payments are non-refundable or exchangeable. If you find yourself unable to attend, you may transfer the ticket to someone else. However, we are unable to refund, exchange, or apply a credit to another offering. All payments are final.

Basic Butchery

Understanding butchery is a key to great cooking. Buying meat in primal cuts allows the home cook to spend less money and produce a broad range of dishes. In this class Chef Jason will offer a demonstration of basic butchery, the knives, the cuts, a guide to different animals and how to determine overall quality. Students will get hands on experience with both poultry and Middleground Farms raised pork.

A Night in Burgundy

A Deep Dive into the Food & Wine region Burgundy, France Grab your partner and join us on the farm as we explore on of the world's great wine regions. Though few grape varietals are planted in Burgundy it offers an amazing range of delicious wines. We will welcome local French wine importer, Katie Ellsweig, who has built a career with Jadot Wines as a Burgundy wine expert, and discuss the history of this heralded region and taste some delicious wines with Jean, our Sommelier. Chef Jason will prepare traditional Burgundian fare to support these lovely wines. Kid’s One Day Camp – Bakeshop

Snacks and lunch will be served.  Make sure we know about any dietary restrictions! If your kiddo loves to bake - this camp is their jam! Welcoming all future pastry chefs!  If you've got the type of kid that loves to watch baking shows, and fancies themselves as a fantastic baker, this one day camp will be a great place to spend a bit of Spring Break!  We will start with the basics of proper measurements, mixing methods and why we need to follow the rules of some recipes, and some we can get creative with.  They'll learn some fun go-to recipes to feed themselves at home (homemade English muffins anyone?) and some fussier, technique driven things like macarons.  They may come home a little sticky and covered with flour, but they will have had a great day in The Kitchen and have learned to be a more successful baker under Chef Kate's tutelage. The class is best suited for ages 8 to 12.

Kid’s One Day Camp – The Science of Cooking Food

Snacks and lunch will be served.  Make sure we know about any dietary restrictions. Learning science through food?  Who knew? When you apply different temperatures to different food - crazy things happen!  Sometimes it's as simply as caramelizing the outside of a piece of chicken. But do you know why?  Your kids will.  We'll use sugar to teach everything from caramelization to how to get things to a "molten" state, and how water affects this.  We'll make edible glass, caramels and rock candy WHILE LEARNING!  That's just the tip of the iceberg.  They'll learn acid vs base and how this changes the way food tastes and reacts.  How about all the things that eggs can do? Will it seem like a science class?  Nope!  It's all about the food during this one day camp.  They'll leave with cooking fundamentals that will make them helpful in the kitchen at home. The class is best suited for ages 8 to 12.

Kid’s One Day Camp – All Things Italy – From Pasta to Cannoli

Snacks and lunch will be served.  Make sure we know about any dietary restrictions. A trip to Italy for Spring Break?  Well, kinda.... This class will be a culinary tour of cooking techniques classic to the food of Italy.  We'll squeeze in a little history lesson as they learn the why's and where's of Italian cuisine.  What kid doesn't like pasta?  They'll learn to make the dough from scratch, by hand, and some fun fillings, shapes and sauces.  How about pizza?  Was it really from the city of Naples?  They will learn to stretch fresh mozzarella and make their pie in the wood fired oven.  Finishing with cannoli: the cookie of Sicily's Carnivale.  They'll learn how to shape, fill and eat these tasty Italian treats! This class is best suited for ages 8 - 12.
